Thai Quinoa and Vegetable Salad (Vegan + Gluten Free)

Servings: 6 | Active Time: 25 minutes

To make this salad, you will need:
– ¾ cup uncooked quinoa
– 2 cups red cabbage, shredded
– 4-5 medium carrots, shredded
– 2 green onions, diced
– ½ red onion, diced
– 1 ½ cups edamame, shelled (fresh or frozen)
Bring 1 ½ cups of water to a boil over high heat, then stir in uncooked quinoa. Turn heat to low and let simmer for 15 minutes, until water is absorbed and quinoa is fluffy.
While quinoa is cooking, shred your red cabbage and carrots, dice your green and red onions, and prepare your edamame according to package directions (if frozen). Then, prepare your dressing.

To make the dressing, you will need:
– ¼ cup sunflower seed butter (or creamy peanut butter)
– 2 T soy sauce (or tamari, if gluten free)
– 3 T light rice vinegar
– 1 t honey
– 2 t ginger, minced
– Salt and pepper, to taste
– Water to thin, if necessary
Combine all ingredients in a blender or food processor and blend until fully combined. Add salt, pepper, and water until you reach your desired taste and texture.
To assemble, combine the cooked quinoa, red cabbage, carrots, green onions, red onion, and edamame in a large bowl. Add dressing and toss to combine, then serve!

This salad can be stored in the fridge for up to a week, so it is perfect for make-ahead lunches or dinners during the week.

Kickboxing is high intensity exercise routine that works the whole body and that burns fat in short amount of time.

Even with extremely tight schedules, it is important for us all to find the time to remain fit. Just a few years ago, most fitness routines centered on yoga, strength training and other similar exercises. However, times have changed significantly and different types of exercises have emerged; among them kickboxing has gained immense popularity. There are quite a few advantages of practicing this form of exercise, and all of these benefits are driving more and more people to take up kickboxing as their way of losing the extra weight and also remain fit and healthy.

Here are six reasons you should don a pair of leather gloves:

  1. Kickboxing is stress reliever. Punching and kicking have a profound effect on dissolving stress.
  2. Tired? The practice is known to fill you up with an extreme amount of energy, rejuvenating mind and body.
  3. It’s a full body workout. Kickboxing involves your entire body. You need to move your arms as well as the legs at a brisk pace. This ensures that your hand and leg coordination will be improved.
  4. Feel the BURN….Kickboxing is one of the best calorie burning fitness routines, reducing fat faster than most other forms of exercising
  5. Confidence and self-image boost. Looking better is great, but kickboxing also impacts your mind by helping to boost your confidence and self-image.

MINT hosting Animal Adoption Event

The Humane Rescue Alliance was formed as the merger of two great animal organizations in DC- the Washington Humane Society, and the Washington Animal Rescue League. HRA provides full-service care for an animal from the moment it is brought into the shelter, throughout the adoption process. Even after the pet finds a forever home, owners can continue to come to HRA for help with veterinary care, assistance with behavioral problems, and vaccination or spay/neuter services. On top of this, HRA also provides an animal police force, fighting cruelty against animals in the DC area.

HRA takes in any animal; their shelters on New York Ave and Oglethorpe street have been homes for bunnies, guinea pigs, fish, reptiles, and even pigs! The shelter is always filled with adorable, adoptable pets waiting to find their forever homes.

On May 13th HRA’s Adoption Force One van will be parked outside of MINT, with cats and dogs all available to be adopted and taken home on-site! MINT will also be hosting a series of donation-based fitness classes from 1-4pm. These classes will be first-come-first-serve, and will require a minimum cash donation of $10. Check the MINT schedule for more details about what classes will be available. Just think, you could leave your house for a cycling class, and come home with a new best friend!

Our neighbors Pleasant Pops and Hudson and Crane are also getting in on the fun, and have agreed to donate a portion of their sales from the day to HRA, with every person who mentions the event at check out. Please stop by, grab yourself a treat, pet a puppy, and pop in for a fitness class, all in the name of saving animals!
